Defatted  Drippings - All drippings are defatted pretty much the same way. After cooking your meat, remove it from the roasting pan and pour the drippings into a bowl. Put the bowl in the refrigerator until the drippings are cold and all of the fat has solidified on the top. Remove the fat and you have defatted drippings. If time is not on your side and you need it quick, place the drippings in the freezer instead of the refrigerator. After about 20 minutes you can remove the fat, heat the jus and serve
