Beef Broccoli Soup

1 pounds of lean ground beef
3 cups of  chopped broccoli
two 4 ounce cans of mushroom pieces (or 1 cup chopped fresh mushrooms)
1 cup of chopped celery
1 cup of sliced carrots
1 cup of chopped green pepper
1 quart of tomato juice or V-8
1 cup of water
1 -  1 1/2  teaspoon of salt
1 teaspoon of freshly-ground black pepper
1 teaspoon of thyme
1 teaspoon of  oregano


Brown beef; drain off fat. Add vegetables, juice, water, seasonings. Place in crock pot, cook on LOW 8 to 9 hours. Freezes well.

This recipe yields 6 servings.
